Thai pork salad with lime

Ingredients
Salad
- Pork fillets: 600g
- Palm sugar: 2 tablespoons
- Lime rind: 1 tablespoon
- Peanut oil: 2 tsp
- Watercress: 350g
- fresh thai basil leaves: 25g
- fresh coriander leaves: 15g
- fresh mint leaves: 15g
- bean sprouts: 120g
- green capsicum: 1 medium
Dressing
- Garlic: 2 cloves
- Shallots: 3
- Fresh small red thai chilli: 1
- Fresh makrut lime leaves: 3
- Lime juice: 80ml
- Fish sauce: 80ml
- Palm sugar: 2 tsp
Method
Salad
- Cut pork fillets in half horizontally. In a large bowl, combine sugar, rind, oil
and pork.
- Cook pork mixture, in large frying pan, over medium heat, about 15 minutes or until
cooked through. Cover pork; stand 5 minutes, then slice thinly.
- Make the dressing
- Place pork in a large bowl, add the remaining ingredients and dressing, and toss to
combine.
Dressing
- Crush the garlic. Thinly slice the shallots, chilli and lime leaves.
- put all the dressing ingredients into a jar and shake well.
