Salad

  1. Cut pork fillets in half horizontally. In a large bowl, combine sugar, rind, oil and pork.
  2. Cook pork mixture, in large frying pan, over medium heat, about 15 minutes or until cooked through. Cover pork; stand 5 minutes, then slice thinly.
  3. Make the dressing
  4. Place pork in a large bowl, add the remaining ingredients and dressing, and toss to combine.

Dressing

  1. Crush the garlic. Thinly slice the shallots, chilli and lime leaves.
  2. put all the dressing ingredients into a jar and shake well.
